Egghead: Breakfast Sandwiches at Proper Eats Las Vegas

Egghead is a breakfast sandwich spot located within the Proper Eats Food Hall at ARIA Resort & Casino in Las Vegas, Nevada. Though the menu is small, it offers a good selection of creative egg-centric sandwiches, hash browns, and drinks.

Though Egghead opened in 2022, it took me years to finally try it. That’s because my go-to spot for breakfast sandwiches has always been Eggslut at The Cosmopolitan of Las Vegas.

Both restaurants are essentially the same, offering breakfast sandwiches with ingredients like eggs, bacon, and cheese. But Egghead’s menu, featuring modern twists on classic breakfast sandwiches, made me curious enough to try it.

On my recent visit to Las Vegas, I finally stopped by Proper Eats Food Hall to try Egghead. I wanted to see if their breakfast sandwiches could live up to the hype of Eggslut.

Proper Eats Food Hall

Proper Eats Food Hall is a modern food hall in ARIA Resort & Casino on the Las Vegas Strip. Finding the food hall can be tricky if it’s your first time. Just follow the signs pointing to the Promenade Level of the resort.

At Proper Eats Food Hall, you will find a wide variety of dining options, including Korean fried chicken, sushi, pizza, burgers, sandwiches, and more. There is also a bar with cocktails, beer, and wine.

Upscale food halls like this have recently opened across Las Vegas, replacing old-school buffets. And they aren’t always the cheapest.

At all the spots in the food hall, except Egghead, you order and pay at a kiosk. Egghead does it the traditional way, where you order and pay with the cashier. After, you wait to hear your name before picking up your food at the counter.

Although there was no wait during my visit, I read that there can be long waits on weekends

While I waited only a few minutes for my food, I enjoyed peeking into the open kitchen and watching the chefs prepare dishes on the flattop grills.

Located inside the Proper Eats Food Hall, Egghead functions more like a counter-service spot than a traditional standalone restaurant.

Therefore, you order with the cashier, pay, wait to hear your name, take your food, and find an open seat or table in the food hall.

All seats were open since there was no dedicated seating for any of the spots in the food hall.

That said, there were counter tables with bar stools around Egghead. While not dedicated seating, they felt like part of the restaurant, and some spots were great for people-watching.

As the name implies, the Egghead menu focused on breakfast items, including breakfast sandwiches and hash browns.

There were four creative sandwich options. You had simple combinations like eggs, cheese, and bacon to more adventurous choices with kale, avocado, spicy aioli, and sunflower seeds.

Sides included a crispy hash brown and a cheesy hash brown with pecorino cheese.

As for drinks, you had coffee, juice, and three types of water, including coconut, still, and sparkling.

The Midtown

I ordered The Midtown. It came with a fried egg, bacon, American cheese, sliced tomato, fried shallots, and spicy aioli.

When I took the first bite, a small amount of rich, golden yolk oozed from the over-medium egg. The egg was simple but fresh.

The bacon had a great, chewy bite, perfect meat-to-fat ratio, and a salty, rich, umami flavor. It was some of the best bacon I have had in a while.

A slice of fresh tomato and a large slice of white American cheese covered the bacon and egg. Slightly melted, the processed cheese had a mild, almost creamy flavor with some funk.

The fried shallots reminded me of crispy onion straws and had a sweet, caramelized flavor. They added a nice crunch and rich garlic flavor to each bite.

As for the spicy aioli, it was not spicy, at least for me. There wasn’t a lot of it, but what I did taste was creamy and tangy.

The final component, the fresh-baked potato brioche bread, was airy but dense with some sweetness. Lightly toasted on top and inside, it held up well to the last bite.

The fresh flavor and softness made me think Egghead uses a local bakery for their buns.

Service

I had no issues with the service on my visit to Egghead. I also had limited interaction with the staff.

When I arrived at the food hall, I tried to order from the kiosk but could not, so I ordered with the cashier at the front.

After a few minutes, I heard my name called and returned to the counter to pick up my food.

That said, I believe the staff would have been happy to help if I had any issues or questions.

Conclusion

Eggslut is one of my favorite breakfast spots on the Las Vegas Strip. So it was hard for me to try something new and give Egghead a chance. But I am glad I did.

The Midtown was great. The over-medium egg, crispy bacon, crunchy fried shallots, gooey cheese, and soft bun worked perfectly together to make a tasty breakfast sandwich.

While both sandwiches and restaurants are similar, I might have a new favorite breakfast sandwich at Egghead in Las Vegas.
